Well, Almost Is Hopefully Close Enough

Doing a ZC protocol for GERD. While it was working wonderfully (a few episodes but nothing major), I'm just too achey/exhausted/sluggish bowels to proceed. Would coming from ZC to VLC be okay? The Perfect Health Diet says starches over vegetables, and both SCD and GAPS say no to pretty much any starches. FODMAPs seems to be refined to specific forms of starches.

After eating just a few carrots and some pumpkin it felt like my neck was tightening again. I'm thinking I'm just screwed here, haha. I can't/have no desire to do ZC forever, but if I'm allergic to everything besides protein ie. I have Eosinophilic esophagitis, that's pretty much it right?
