I have been making a switch from dairy to coconut milk, and because I love yogurt, I tried making some yogurt from coconut milk. However, guar gum tends to bother me, so I was wondering if the fermentation process would also break down the guar gum so that it doesn't bother my digestive system as much. If so, it seems like it makes sense to use the yogurt in place of coconut milk in a lot of my recipes.
