the past couple days, I've woken up feeling as if I was pretty hungover, but I haven't been drinking alcohol...does anyone know what could be going on?

Long term low carb diets can cause sleep problems, I have experienced this myself and I know others have as well. Your time spent in restorative sleep can be vastly reduced, making you feel like shit in the mornings.
Try eating some sweet potatoes for dinner, you will sleep like a baby and wake up feeling rested.

Like what @SenseiPaleo said, your body could be transitioning. In the mean time, make sure you're getting enough healthy fats and calories. I've found grassfed heavy cream to be the most effective, but if you don't do dairy, make sure you're getting plenty of coconut oil and rich fatty cuts of meat. The only other idea I could possibly have would be if you've been writing many fictional scenes involving drinking and it's getting to you. (once in one of the novels I'm working on, there was a horribly stereotypical drinking scene involving a drinking contest between a petite Irish girl and a tall Finnish guy, and the day afterwards I felt oddly hungover even though I hadn't been drinking :/ OTL)

If you are new to the paleo diet then your body could just be transitioning. This takes some time, not much really though, and can be equated to withdraw symptoms. Your body is killing its sugar addiction while your healthy fat burning systems are restarting and struggling to bloom. Eventually you will feel better than you ever have.
If you are not new to the paleo diet and this is a sudden onset situation I would recommend seeing a doctor. You may be ill. You may have also ingested gluten somehow and that is causing you fatigue, or maybe your body is just going through a random detox. This has happened to me before and I have no real explanation for it. Maybe your fat ingestion is too low while your carbs are as well. Try some coconut oil in a hot cup of tea. Good source of fat energy. Also maybe some time in the sun or a light activity. Get the blood flowing.
Or try a shot of whiskey as Mr. Norris suggested. : ) @Cdc12c
