I think sulfites are part of the Curse upon overly processed foods, but some humans are more sensitive than others. Are you affected by sulfites?

http://www.readingtarget.com/nosulfites/ and http://allergies.about.com/od/foodallergies/a/sulfites.htm

are good places to read a bit more...

Do you have any good papers or website links for more on sulfites??

I've never had trouble with silences that are derived from celery, ESP in high-end meats. I have had trouble fro what i perceive as cheap sulfates from overseas, but that might be a by blow of the cheapness of the sulfates.

Sometimes yes, some times no... Kinda irritating that it is so inconstant... Makes me think there are differing levels of quality in the sulfites used iin wine.

Thank you PG, I've been avoiding them for years on basic principles. I'd much rather cook up a storm.

The sulfites seem to be mainly in foods which are easy to avoid, such as: dried fruits, wine, and dried potatoes. It is possible to get those foods without sulfites.

Another way to phrase that is that processed foods are a curse. :)

Best wishes to you.

Robb Wolf just talked about these on his podcast saying that they were not the evil item that they have been claimed to be. They are also in celery. I still avoid them in processed meats like hot dogs and lunch meat (yuck!)

It may not be the sulfites rather the high amounts of histamine in wine.
