i used to eat sweet potato for starch but got sick of it, my dad recently bought organic brown rice at costco. its quick, easy and convenient, buts it very dry with tuna.

what would you recommend adding on to the rice?!

I second the EVOO or homemade mayo. Maybe with fresh herbs or a diced tomato.

You could totally make guacamole and mix it in with the rice. Would be awesome with that tuna, too.

I mix coconut milk or kerrygold butter into my white rice depending on mood.

i agree with avocado and salsa. I have added plain greek yogurt in place of mayo with tuna to make tuna salad and it turned out really good.
