My kiddo loves water kefir, but like most mamas, I'd like to make sure he's not boozin' it up. Some of our batches have tasted more like alcohol than others, I'm still messing with my 2nd ferment formulas. I know it is supposed to max out at 3 percent, and usually stays well below 1 percent, but I'd like to know for sure.
