I just started making water kefir and will start dairy kefir soon. I have heard that extra kefir grains can be used in vegetable ferments instead of whey. I can't seem to tolerate whey so I use a lot of salt when following Nourishing Traditions.
I am looking forward to less salty veggie ferments if I can make this substitution. Does anyone have experience with this? Can you substitute one tablespoon of kefir grains for one tablespoon of whey?
