Veggies - cooked or raw?

Do you find that raw is significantly better than steamed or grilled? (Personally, I eat a lot of raw veggies during the day while I'm at work)

Mix them to get the most benefit. Cooking lowers vitamin content but improves general digestion and breakdown of the plant matter b/c the plant cells are getting damaged due to the heat. Raw preserves some vitamines and beneficial soil bacteria.

It's all about diversity! :-)

Raw vegetables will "hold on" to more of their nutrients than the cooked kind. When vegetables are exposed to heat treatment, their some of their cell walls collapse, letting out more nutrients. Boil them too long, however, and they will have let go of their nutrients to the water instead, and you'll essentially pour out the nutrients with the water. From what I've heard, steaming vegetables gives you the best of both worlds; it opens up their cell walls, but doesn't leach its nutrients to the water.

It depends on whether you have any thyroid problems or not. I have to steam most of my veggies as a high number of them such as Cabbage and others from that family contains goitrogens (bad for those who are hypothyroid) which are reduced by a third when cooked.

Cooked = easier to digest; raw = nutrients, enzymes fiber. Don't forget fermented raw (i.e. kimchi, sauerkraut) - possibly my favorite. For example, sometimes I don't digest cabbage well - cooked or raw - but I can always handle fermented cabbage.

A mixture of both is good, for both nutrients and digestion. The more important factor is to eat vegetables with fat, as a lot of their nutrition is not available unless fat is present.

It depends. For some veggies, cooking makes more of the nutrients more bio-available (e.g., carrots or tomatoes). For others, cooking may inactivate an anti-nutrient (e.g. broccoli). FWIW, Mat Lalonde mostly eats cooked veggies.

Raw veggies make me bloated.
