Clever Ways to Add More Veggies?

I pretty much despise all veggies except cauliflower, sweet pototoes, carrots and tomatoes (I know this is a fruit!). Anyone have some good ways to prepare veggies or sneak them in? I'm looking for your favorite veggie recipes, please. I've only been eating about a serving a day which isn't healthy.

Yes, it's obvious. You're probably fine on veggies if you eat these on a regular basis. Greens were the only thing missing, which was my point. Please, get MORE bent out of shape.

You've got flowers, fruits and roots represented. You just need some green leaves of some sort and you're set.

Chop them up small, saute them until soft with onion and garlic, let them cool, and add them to ground meat, whatever seasonings, and an egg. Make meatloaf or burgers. I've done it with spinach, broccoli, carrots, kale, cabbage (green and purple), Brussels sprouts, tomatoes (fresh and canned), mustard greens, collard greens, etc. Sometimes I'll do combinations, just depends on what I have and what is past its prime.

Make fake pasta by shredding zucchini or carrots in long thin strips and then sauteeing them! Also, since spinach shrinks down significantly when cooked, it is always easy to just add a large handful to any meat in a pan, and it will shrink down and taste really good in the fat from the meat.

Carrot fries are one of my favorites too! You cut carrots into french fry-like pieces, and toss them in olive oil, salt, pepper, and garlic powder, then bake them on a lined cookie sheet for 20 minutes at 400 degrees F.

In general, I find it easiest to just throw frozen veggies into any pan with meat or sauce, to cook them down and make them taste like everything else, so you won't even notice them!

I've known a number of people who find roasted green vegetables palatable when they can't stomach the same veggie prepared other ways. I love to roast brussel sprouts and feed them to people who claim they do not and will not eat brussel sprouts. Broccoli and kale are also great roasted. If you can get past the fact that you're eating those veggies unconcealed, you should give it a try. Cut (and in the case of brussel sprouts, flake the leaves apart), rub with oil, sprinkle with salt, put them in the oven at 375 (I bump my kale up to 400 for the last 5-10min), roast for about 20 minutes. Stir occasionally.

I like them hot and fresh because they're salty and a bit crispy, or try tossing broccoli or brussels in a little lemon juice, ginger, and soy sauce.

You could try blending them into a pulp with some kind of oil and then adding them to a soup or sauce.

You know, I've been hanging out with PaleoHacks now for about a month...all the while trying to help people with their issues/questions. And when I finally ask a question, instead of warmly welcomed and given advice, I'm given a smart butt answer from one of the leaderboard people and made to feel dumb for asking a question already answered. Thank you to MathGirl and Elunah for your answers. I will not be returning to Paleohacks.
