I have IBS too. The veggies I eat are low-FODMAPS (so less gassy) and higher in soluble fiber (i.e. your carrots, and the inside flesh of your zucchini) and low in insoluble fiber (i.e. your lettuce, and the skin of many veg, which are all insoluble).

So some safer veggies for someone with IBS-D (diarrhea predominant) would be: squashes, yams, beets, carrots, maybe spinach (although it's high in magnesium which can also cause D for someone who is prone to it). Peel and cook your veg to make them more digestible.

There are so many recommendations for the gut - I personally know 3 people who have been able to eliminate their symptoms with the GAPS diet (www.gaps.me). None of them started super hardcore, but they all added bone broth, cut down on raw vegetables, cooked their carrots, and eventually felt better. I would check out the website, you can learn much more there than I could explain here, and can do further research on anything that might interest you in particular about the protocol. Good luck.
