Any tips for eating Paleo when traveling in a small RV?

My husband and I are new to paleo, and next month we are leaving on a 2-month trip to the South in our small motorhome. In the past, when traveling in our RV, we ate cereal for breakfast every other morning (eggs and toast on the off-days), and we always stopped and just made a quick sandwich for lunch while going down the road. We don't have a lot of room in our small kitchen, but we do have a 2 burner stove, a microwave-convection oven, and a fridge with a small freezer. Anyone out there doing paleo on the road in an RV? Any tips or ideas?
