I notice that my batch is too salty. Can I add more water to it while it's in the middle of fermentation process?

I'd let it finish fermenting first.
I usually ferment the same beets twice (don't add salt to the second batch because you keep a little of the first batch in the fermentation jar). Then I mix the batches together and it's usually just right. If not, THEN you can add water.
