What to do with beef tallow

Ordered some beef tallow from US Wellness. It's a huge tub of it, which surprised me. Package says to keep it frozen but it doesn't seem soft. How do you all work with this product?

I guess keep them frozen in smaller containers that are of usable portions.

Great suggestion! Didn't think of buying grain-fed meat and displacing its fat with the grass-fed stuff. I was already planning on using it with veggies in places where I use olive oil today.

I think the question has been misunderstood. I'm not asking so much about what I can cook with it but how do I break off a manageable chunk when it has to be stored frozen and I can't possibly use it all at once. Some great suggestions about what to do with it though.

Cook meat with it. Its smoke point is about 420*F but you should definitely cook well below that (about 350*F) and it is reusable since it's less likely to go rancid. I'd store it in a non-plastic container in a cool dark place.

Mine is also hard, partly because I keep it in the fridge. I shave off what I need for slow-frying beef--budget forces me to buy CAFO so I buy very lean stuff and use the grassfed tallow to cook it with. I use plenty, pouring it over the plated meat. I've also used it for slow-frying veggies (slow frying is heat setting 4 on a scale of 10.)

Make Pemmican! Lots of interesting combinations out there but my favorite is made using regular beef.

As for storing, mine is in a glass jar in our pantry. I usually use it up over a few weeks though.
