Is a 5 Gallon bucket too much tallow for a family to use?

So, I'm thinking of diving in a ordering the big bucket of tallow from US Wellness Meats (if someone knows of a source for an equivalent in or near Washington state that would be preferable). I'm wanting to make a big batch of pemmican for personal consumption and Xmas presents, and will use the rest for cooking. The website says that it should be kept in the freezer for long term storage, but I was hoping that we could keep it in our shed as the weather cools down to the typical northwest 35-55 degree range in the near future. Has anyone ordered this much at once? I don't want to get in over my head, but this seems darn convenient and at a much better price than smaller batches.

ah OK. So when Annika says "...this was homemade tallow skimmed off the top of whatever I was cooking..." is there another term for this, as she's not using a 'rendering' process - or is she? Anything skimmed off from cooking I would probably call 'lard' (if it was from pork) 'dripping' or simply fat. I've also just read that even 'edible tallow' isn't recommended for cooking as it doesn't taste very nice. I'm now officially confused. Back to work! :-)

I think this is what I'll probably do if I get it. I could do a lot of it in our little regular freezer, but I wanted to leave room for meat and prepped meals too. I suppose if the stuff in the shed starts to turn I could always make some candles.

I was guessing that they would have to stick with the official "put it in the freezer line" to avoid any potential complaints or lawsuits. But, yes, I should probably give them a call and see what they meant by "long term storage".

Tallow is rendered animal fat (usually beef) and is used for candles and soap. McDonald's used to cook french fries with it before they were sued and switched to trans fatty vegetable oils (right around when obesity took off in the USA - coincidence?). Good beef tallow (not industrially processed) is a great fat for cooking and what US Wellness sells.

You could always divide it and put some in the freezer and some in the shed. We've been cooking exclusively with tallow for a month or so and it's so yummy. You didn't say how big your family is, but I think it sounds like a good investment. Send me some pemmican!

OK, I'm confused here, but it may just be a transatlantic language issue... ;-) You're cooking with 'tallow'? To me, tallow is an industrial rendered-fat product, used to make candles and soap. How (and possibly why) do you cook with it? Do you use it instead of lard and oil etc? Curious!

Side-note: if it's rendered animal fat as I understand it, it 'should' keep fine without refrigeration as long as you keep it air-tight.

I saved some tallow from cooking and expected it to keep forever in the fridge like bacon grease does. It did not! After three weeks or so (?), it got moldy. However, this was homemade tallow skimmed off the top of whatever I was cooking, and may have had much more contaminants (meaty bits, broth) than store-bought tallow. I would also venture a guess that it would be a PITA to scoop a portion out of a frozen bucket. Wouldn't it have to partially thaw first? Alternatively, you could divide it into many small portions for freezing.
