Beef Tallow: Rendered vs.Non-Rendered

I have been looking at a couple of kosher grass-fed websites and one made the point of mentioning that the beef tallow is not rendered (Non-rendered Kosher Beef Tallow

What is the difference between this and regular rendered beef tallow?

In other words, I think the merchant is confused.

Not rendered means it is fresh off the cow in its natural state. Rendered means it has been cooked down and recooled into a butterlike state as lard is. Most butchers will have a bin of unrendered fat chunks.

Judging by the picture and by the fact that the "tallow" comes in a bag I bet they're selling beef fat that you render yourself to make tallow and not the finished end-product. I think tallow would come in a can or pail, not a bag. Think coconut oil - if you bought 15 pounds of it would you expect it to come in a bag? Also, $3 a pound is too cheap for kosher grass-fed tallow, which is more of a niche product that non-kosher grass-fed tallow. I get non-kosher grass-fed beef fat for $2 a pound and I get a yield of less than a pound of tallow from a pound of fat. So, if it really were tallow they'd be charging a bunch more.

It sounds like they are just talking about a bag of fat. I get mine for $1.99/lb at the farmers market and render it myself (easy enough to do). It's organic, grass fed but not kosher certified. 15 pounds sounds like a lot of fat to have to buy at one time.
