I think this is one of those "how do you feel" sort of things. There's not really any tests for it that you can take to say "Hey, you've got the optimal levels of gut bacteria". So, if you're feeling better, keep on doing what you're doing. Unless you want to spend on extra probiotics. :)

On second thought, I think I eat enough Greek Yogurt and other high-probiotic foods when I can (like Sauerkraut) that my probiotic levels are okay. My gut is certainly a lot less leaky than it was before I was diagnosed with celiac. =)
Any further thoughts still appreciated!
