I removed dairy, gluten, legumes and sugar from my diet 15 days ago (also stopped my sometimes smoking and regular alcohol consumption)
My diet has consisted of Breakfast: eating eggs and bacon or eggs, fruit and nuts Lunch: salmon, beef chicken with spinach or brussel sprouts (and sometimes some sweet potato) Dinner: similar to lunch, heavier on salmon and steak with veggies 1-2 Snacks (small quantities of one of two of the following and only when hungry) olives, salami, almonds or walnuts, raspberries, apples, almond butter
I cook with coconut oil and olive oil. I also try it incorporate avocados when I can. I have eaten a square of 70% dark chocolate per day for the last week.
I drink at least min 7-8 bottles of my 28oz water bottle, and try to always be "peeing clear"
My headaches have finally stopped but I am still very fatigued. I have not started taking any supplements because I wanted to switch to the new way of eating for a few weeks first before incorporating them. Should I continue to wait this "detox" out or should I start taking vitamins/supplements (recommendations please) or tweak my foods?

I would try eating some liver or oysters before diving headfirst into supplements. Organ meats and shellfish both are richer in minerals than the muscle meats you're currently eating. And make sure you're eating a diverse variety of vegetables rather than sticking to just a few.

I would take supplements if I were you. The fatigue may be caused by micro-nutrient deficiencies. Even when you eat a very healthy paleo diet, you can still have some deficiencies.
