New to Paleo and need help

Hello, fellow cavemen. I'm a 20 year old male who is just beginning his transition to Paleo. I decided to give Paleo a try because I've suffered from bad digestion for years, which is really uncomfortable, and because of some other health concerns that I have.

The problem is that Paleo eating is a bit counterintuitive for me. I live in Peru, and almost every meal here consists of a portion of meat with rice AND potatoes, so I'm used to getting the bulk of my calories from carbs. Now that I want to reduce my carb consumption, I'm finding it hard not to stay hungry after I eat. Usually I will feel hungry lees than 3 hours after my meals, while previoulsy I could easily wait 6 hours between meals. It is kind of weird, because sometimes I'll eat till I feel full but then become hungry very quickly, which didn't every happen when I ate meals high in cabrs. Since I'm extremely skinny (1.85 m and 64 kg), the last thing I want is to start losing weight.

Having all that in mind, there are a couple of questions I would like to have answered:

1) Can I consume protein without worrying about eating too much of it? I've read that one should consume around 15-20% of you calories from protein. Can I trust my hunger to tell me how much meat I need to eat?

2) Can I consume as much fat as I want? I used Fitday to track my food intake, and I found out that I'm eating around 65% of my calories from fat, and almost half of those from saturated fat. That's like 25% of my daily calories, which is 3-4 times the amount that conventional "nutritionists" recommend.

3) Am I exaggerating in lowering my carb consumption? At the moment it's around 17% of my total calories (I eat a fruit at breakfast and potatoes with lunch and dinner) Would it be safe to add some rice in my meals to increase the percentage of carbs to 20-25%?

eat your consistant 3 paleo meals a day and find good snacks (nuts,dried fruit, ect) that you can snack on during those between meals period that wont make you feel so hungry. What ive noticed doing paleo is that at the beginning I was just like you where I was hungry all the time ate almost every hour and thats because I so used to a normal diet where food would fill me up for a long time and I was so used to eating alot of carbs that were filling. For me I think my body/mind is still expecting that full feeling which made me eat more and more to get to that feeling. In time that has gotten alot better and I can eat 3 meals and one snack during the day and feel satisfied. That could be whats going on with you. 

I also dont think it would be mad to consume rice every 2 weeks or so. I treat myself to rice and curry because I feel like I need the carbs. This is an awsome way of dieting that helps you tune in to your body and see what it needs.
