What evidence is there that Stevia causes insulin response?

It's not a sugar so how exactly does it cause a release in insulin?

I've heard that in some cases just thinking of or anticipating eating something sweet can cause an insulin response

I don't think there is much. The Japanese have been using it for decades to lower blood sugar levels. This interesting article was on Chris kesser's blog yesterday:
