Should I be concerned about brands of cooking oils (EVOO, Coconut, etc.), and spices that are processed in the same factory as wheat, soy, peanuts, etc...? I've found some that do not but they are usually more expensive.
I do not have any allergies but I do avoid the stuff.

I think it shouldn't be a concern for most people. I'm what's considered a "super sensitive celiac": I react to under 10ppm of gluten. I've had trouble with a few spices (but no oils) that are processed in facilities with wheat. Most celiacs I know of don't sweat it. So if you're not super sensitive, and you're not allergic, I wouldn't worry about it: I doubt it would be causing you any harm.
