I have been strict paleo for about four months. My experience with paleo has been incredible. I have never felt better in my life! My weightloss seems to have completely stalled though, and is headed in the opposite direction. I am 5'1" and 125 lbs (started at 140 before paleo). I work 2 jobs and am a full-time student (so I am definitely not getting the right number of hours of sleep a night). I recently started crossfit about 3 weeks ago, and I have been doing it twice a week for an hour each session. I sometimes play soccer, but rarely have time to go to the gym. My meal plan looks like this:
- 2 pieces of bacon and 2 eggs in the morning cooked in coconut oil
- A garden salad with veggies and grilled chicken or tuna
- Salad and spaghetti squash, grilled chicken, turkey burgers (mostly just veggies and meat).
- For snacks I eat raw coconut flakes and 80% cocoa dark chocolate, or a piece of fruit.
I have been trying to cut out nuts and fruit because I know they make me gain weight, but I am finding it hard to find filling snacks in between classes or exams or work. I have started to gain weight (which may be me putting on muscle... I am not sure?). Can anyone see anything I should improve on to help shed those last couple of pounds? Or rather, any good snack ideas for in between classes? Thanks!

body composition is a far better marker than weight. not many more things you can do beyond diet/exercise. as you noted, if your gaining weight but maintaining fat level or only very slowly dropping that is fine considering your shedule; also note losing weight slows down considerably the closer you get to your goal weight.
