No-cook options: avocados, jerky, olives, nuts (coconut, walnuts, anything really), cucumbers, carrots. Cooked options that "don't smell": cooked sweet potato "chips" (just baked fries, really), cooked veggies of any kind.

The canola/safflower/sunflower/frankenstein n-6 oil is way less than optimal, but should you desire to eat sweet potato/parsnip/batata/taro/yucca chips, why not try making them yourself at home? It's really easy, I promise.
Do you think unsweetened banana chips fried in coconut oil are relatively paleo-friendly? I just need something crunchy sometimes. If you have any crunchy snack ideas, do share. I can't eat too many nuts though.
Get the fancy grade dried coconut shreds (the fat shreds) put about a cup into a pan on med high till toasty brown. Toss with salt and whatever spice you like. I like salt and cinnamon or salt and smoked chipotle powder.

Boiled eggs sounds like a good fit. Pretty easy request for breakfast, and carry a few for lunch. Bacon from breakfast should also keep till lunch time. Also carry some coconut oil for added fat.
