how to smoke a 9lb shoulder roast without taking "all day"

I want to smoke a 9 lb shoulder roast for an afternoon picnic (dinner served at 4), but im gonna need about 12 hours+ hours to smoke this puppy. i would prefer not to get up at 4am - but i will if i have to - so is there anyway i can "start" it in the oven at a higher temperature and then "finish" it on the grill? I do not have a crock pot big enough to cook it inside.

Do you want slices or pulled meat? Pulled meet takes more time, you cannot fake it in less than 8-10 hours. (Incidently, for pulled - I'd go 225 for 10 hours.

If you want slices you can get away with less time. I would shoot for 250 for 5-6 hours and then wrap it for 30 before I sliced into it. Make sure you use some type of injection and mop every 90 minutes or so to keep it from drying out.

I've watched these guys do it on TV but never tried it.


I didn't want to sign up to get the recipe. From the description it looks like you still need to slow roast because it's a tough cut. Faster than a smoker though.

I'll run my barrel smoker hot to roast smaller pieces but never something that big.
