Significance of Sell By Date?

I got a really good deal on some Smart Organic Chicken (i know not the optimal Paleo protein source) -- but the "sell by" date was my purchase date. So I am going to cook some today and freeze the rest. How long is it good past the sell by date? I always thought --1 week in frig and 2-3 months in freezer--is that correct?

The raw meat is safe frozen forever, but I wouldn't push it past 3-4 months to protect the texture and flavor.

Frozen meat is good, microbially, forever. Quality wise, with a vacuum seal, is around 3-6 months for poultry, or 12 months for beef.

If I buy meat at the sell by date, I cook it that day or freeze it that day. It has been sitting around the store for several days at that point, and I don't want to extend it.

For raw meat products, you should cook it within 2-3 days of the sell by date. Once you've cooked it, it's fine in the fridge for 7 days and good in the freezer for about 3 months.
