Whole Wild Salmon Source?

I am looking for whole wild salmon, head on (or custom cut that includes the head.)

There are a lot of sources online, but most have "headed and gutted" fish. So the head isn't included. Ideally this would be Sockeye Salmon (since it is in season), flash frozen and shipped for a reasonable price.

Also, what happens to all the salmon heads? They are regularly eaten in other cultures, and used in raw pet food, but I cannot find a source for wild salmon heads at all!

I asked at whole foods Union Square (a few weeks ago), and they don't get the wild heads in, only the farmed salmon are head on. I will keep asking :)

Yes, it's a fair question of course. I was mostly joking. Though salmon is much easier to obtain in the wild than cows or chickens.

I've got a co-worker commercial fishing in Alaska right now. I'll ask him where the heads and guts go when he gets back. Salmon don't keep very long unfleshed, but I've never had much problem getting them head-on. The heads go into my pot with the rest of the bones after filleting, to make stock and to reclaim the meat.

Yeah getting salmon heads by UPS isn't very paleo.

Find out where your local upper eschalon seafood restaurants source their fish. Not sure where you are, but most coastal cities have a big wholesale seafood market. A decent large grocery store like Wegmans or Whole Foods or a specialty fish store could order a whole salmon for you.

We get wild salmon filets at a great price through a buying club from Lummi Island Wild, they may be able to source fish heads for you.
