Any thoughts on a Paleo Version of Caesar salad? Either the dressing or the salad itself?

I love the homemade dressing! I will even use it as dip.

Besides croutons (i'd forgotten croutons go on salads :-/) and cheese, you're OK. I personally don't mind a good parm in a caeser: http://www.foodnetwork.com/recipes/caesar-salad-dressing-recipe/index.html

If you make the dressing (egg, olive oil, garlic, anchovy, mustard, salt/pepper) yourself, and omit the croutons and cheese as mentioned prior, I think you're OK. Throw some chicken on there and it's even better.

I would add bacon or crispy pork skin to replace the crunch of the croutons.
