I just finished my second week of Paleo. My daughter introduced me to this as a nutritious way to eat and lose weight. Does anyone have a good salad dressing recipe?

Careful, it turns out that most balsamic vinegars has been found to be high in lead for some reason.

EVOO + vinegar. Bonus points if you ferment your own.

When I first decided to loose weight, I started Atkins. I googled for Low-Carb Salad Dressings and I found Mark's site. I spent the next three days reading through his archives. (now that the aside that no one cares about is done):

Extra virgin olive oil and white wine vinegar - in about equal amounts. Add a bit of mustard ( I use dijon), some black pepper, and maybe some herbs to taste. Mix it all up together and drizzle over your salad.

I just mix olive oil and lemon juice together - perfect combo!

Balsamic Vinaigrette is a good dressing for the salad.

In a medium vessel, whisk together vinegar and mustard. Include salt and pepper. Spill in olive oil gradually, whisking always until generally consolidated and velvety.

Makes something like 1-1/2 mugs dressing.

It's not super flavorful, but I like to spray olive oil over my salad and then sprinkle on either sea salt or iodized salt. If I'm having fish on my salad I think it's perfect just like that. You can also sprinkle a tad of vinegar and/or lemon as well.

This is the easiest mayonnaise ever. I use light olive oil - don't use extra virgin, the taste is too strong.

I like lemon infused EVOO with salt, or EVOO with lemon juice and salt.
