Are convection ovens Paleo AND safe?

I may soon need to replace my gas oven/range.

My friend suggested a convection oven because it cooks faster and browns.

Is browning bad?


Is browning Paleo?

Personally, I find grey meat off-putting. I like a nice sear on it. Ovens in general aren't Paleo, but since I live in the 21st century, I'm going to embrace it.

On the spectrum of food badness, browning isn't 100% healthy, but honestly: don't worry about it. In fact: seek it out sometimes.

The Maillard reaction increases sweetness somewhat, as well as changing texture. It also happens not just in meat, but vegetables and tubers (really, any food). There is a likelihood that AGEs and HCAs are produced when browning. However, there is a huge difference between browning a food and burning a food. Meat turned into charcoal bricks most certainly is not the healthiest thing you could be eating (high AGEs and HCAs), but a seared steak? Just don't worry about it. When roasting and baking veggies, a little browning is often desired as well .. but again, just don't burn the food.

Verdict: browning is just browning, it's not paleo or not, but a an often sought-after effect of cooking foods.

If this may effect your decision for buying an oven or not, I can't say. Good luck with that, though. :-)

Convection ovens are nice because they cook more evenly and maintain constant temperature throughout the oven better. My oven that is only a year old has hot and cold spots.

"Is browning Paleo?" - I think that's taking Paleo to the extreme...reenactment style.

I would imagine meat would get pretty brown cooking over an open fire, so if that's your criteria for being paleo, seems like the convection oven should be just fine.
