Why are safe starches considered safe?

Hi. Could someone clarify for me why starches like sweet potatoes and yams are considered "safe" when others are not?

Because they contain low levels of the anti-nutrients (prolamines, lectins, etc) that are so common in grains which cause gut problems and inflammation. Sweet potatoes, yams, white rice, all have little to no anti-nutrients and are thus "safe" -- they will not cause inflammation.
