Has white rice been stripped of harmful proteins, or not?

I recently finished Robb Wolf's book, and unfortunately, although he mentioned getting to re-introducing grey area foods later, I either missed that section or he didn't get to it.

From his explanation of grain composition, white rice, having been stripped of the germ and the bran, should just be starch. In that case, while it may not be the best source of starch from an insulin stimulation point of view, will it contribute to gut irritation?

Or does it still have trace amounts of harmful proteins even after being stripped of the bran and germ? How do Celiacs react to eating it? Do they still have problems?

Oh by the way I am not a bodybuilder. I lift heavy weights for strength.

I don't have celiac. I don't know if white rice has been stripped of all it's protein either. But I cam say that I eat it maybe once per week. Only started about one month ago but haven't had any issues. It's definitely the only grain I eat. I use as a dense carbohydrate the night before lifting heavy to give me a little glycogen re-feed as it were.

I've seen white rice being used in Paleo-Bodybuilding circles for a carbohydrate source, so it should be fine. I've also eaten white rice on occasion, and it hasn't caused any reactions in me, whereas any kind of flour/wheat product gives me a sludge/bloated feeling later that day, or the next morning.

Like you said, the proteins have been effectively stripped from the rice, and as long as it's white, it won't cause any gut irritation.
