Since they are both purple on the outside, I thought they were the same thing, but while looking up recipes, it appears Japanese sweet potatoes are white on the inside, while purple sweet potatoes are dark purple inside and out.
Which contain more nutrients? Are they basically interchangeable in recipes? And which do you think I should serve at Thanksgiving? Thanks!

Okinawan Sweet Potatoes is my favorite, but they can be dry. I like to microwave partially and then pan fry in coconut oil.
