Throwing a Paleo Graduation Party with Appetizers!

Hey guys! I am throwing my husband a graduation party for graduating the Police Academy, and we are doing all appetizers. While some of our family members are pitching in and making appetizers (that I guarantee are not Paleo), I want to have the majority of the appetizers be Paleo. Here is my question- What is your favorite and EASIEST Paleo appetizer? I would love to make it for the party! I am up for any and all ideas! My husband is not sure that I can pull this off, but I KNOW I can!! Thank you all for your help! and Happy Thanksgiving!!

As much as I love these things, I've had a heckuva time making them to where the bacon is crispy enough for my tastes while the scallop isn't overcooked/tough. I make me some "bacon & scallops" these days. Kitchen sheers are awesome for cutting bacon into squares. I fry these, then fry the scallops in the bacon fat. Then put the bacon on top. Not quite as pretty, but the flavor/texture trumps that!

Bacon wrapped scallops, guacamole with veggies, some kind of cocktail meatballs (??).

Proscuitto melon balls, dates stuffed with bleu cheese (if you do dairy) and/or pecans, bacon - just plain strips of bacon like at a steak house, Thai chicken lettuce wraps, guac with crudite, bean-less chili.. I liked the cocktail meatballs idea that someone had too! If you eat nightshades, grilled eggplant rollups with whatever you want (we do dairy so usually dairy and some marinara! Have fun and congrats to your husband!!

The above sounds good, but almost everyone will grab a little fruit salad--or fruit skewers--regardless of their particular diet approach.

Or, sweet potato chips.

Or, a mix of nuts and dried fruits.

Or, raw veggies like celery, cukes, broccoli, etc.

How about deviled eggs? Surely you can make a paleo friendly mayo.

Seafood rocks for appetizers ... scallops, shrimp?

And kabobs! You can get short wooden kabob sticks, but if not, cut longer ones in half. INFINITE possibilities there.

My favorite: dates stuffed with walnuts and wrapped in proscuitto. I just made these for a party on Sunday and they were a HUGE hit! I could have eaten the whole plate myself
