I'd like to make a raw liverwurst but can't find a good recipe. I have a good source of organic grass fed liver and I love liverwurst :)
Any pointers for the recipe?

I live in Germany, the home country of liverwurst and I can tell you that liverwurst is always cooked. Liver is highly perishable, so raw liverwurst is not something you would want to eat.
I have never made it myself, but in principle the procedure is as follows:
Cook onions and liver, then grind with (both smoked and unsmoked) fatback and raw pork. Season and stuff into casings or fill into jars. Cook again. Smoke, sterilize or eat right away.
