Pumpkin Recipes?

I have a ton of canned organic pumpkin from Trader Joes (stocked up at Holidays) and need some recipes?

Actually yeah, originally I did use honey in this recipe and it works quite well, very tasty. Dextrose is pure glucose--it's just my personal preference to fructose-containing sweeteners.

These look delicious, but I don't even know what powdered dextrose is? Have you tried using honey?

This recipe is AWESOME. If you use a spicy sausage it really, really turns up the flavor.

These are best made silver dollar size and served with honey butter.

Oooo me too. I bought a ton of organic canned pumpkin that Amazon was clearing after the holiday season was over...now I need a good set of reliably delicious pumpkin recipes as well.

Pumpkin Sausage Soup

Ingredients

20 oz Sausage
1/2 cup Onions
1 Garlic Clove
1 tsp Italian Seasoning
2 cups Mushrooms, chopped
15 oz Canned Pumpkin
4 cups Chicken Broth 
1/2 cup Whipped Heavy Cream
1/2 cup Water

Directions

  1. 1 Brown sausage, drain, then add the onion, garlic, Italian seasoning and mushrooms and saut?? until done.
  2. 2 Add pumpkin to this mixture and mix well.
  3. 3 Then stir in the broth and mix well.
  4. 4 Simmer 20-30 minutes.
  5. 5 Stir in the heavy cream and water and simmer on low another 10-15 minute Taste and add salt& pepper as needed.

Pumpkin Smoothies!!!!

A couple big scoops in a blinder with 1/2 frozen banana, 1/2 can of coconut milk, cinnamon and nutmeg. Yum!

Pumpkin Pancakes

1 whole egg
2 egg whites
1/2 cup smooth almond butter
1/2 cup pureed pumpkin
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp vanilla
2 tbsp unsweetened applesauce

Pumpkin Almond Butter Brownies

Ingredients

2 cups Almond Butter
1 1/2 cups Canned Pumpkin
2 egg
2/3 cup Honey
2 tsp Baking Soda

Directions

Combine all ingredients in a bowl. Mix well. Pour into a greased 9 x 13 pan. Bake at 350 for 25 minutes or until a toothpick inserted comes out clean.

The two I make the most are: coconut-pumpkin soup in innumerable permutations and this pumpkin mousse in which I sub maple syrup for the brown sugar and turn it into a crustless pumpkin pie. (Thanks for this question--I buy canned pumpkin in bulk b/c it is one of my favorite things and available inconsistently in our grocery store and it is nice to have some new recipe ideas.)
