What are your favorite pulled pork recipes and/or recipes for pork shoulder roast?

I just season mine and put it in the slow cooker (or crock pot, depending on when you're from). I cook it usually overnight, until it's falling apart.

Once pulled I mix in with it the Primal Barbecue Sauce from the Primal Blueprint Cookbook - this stops it from drying out.....and I'm happy eating this for several days :-)

I've tried a few other recipes but nothing beats this, for me.

Rick Bayless' Cochinita Pibil is a staple of mine. The flavour of achiote/annatto is earthy and not spicy. Excellent for chicken and seafood also. Rick gives his recipe for the paste here where other recipes call for store-bought which contains who-knows-what. Works just as well in a crock pot in the oven as in banana leaves over coals. Any way, it's bloody tasty!

I make a simple dry rub and liberally douse my pork and let it sit in the frig overnight. I don't have a crockpot or grill so cook it uncovered at 300* for about 5-6 hours fat side up,I baste it in it's lovely fatty juices once or twice. I remove it cover it with foil and let it sit for about 30 min. then go at it with the double fork method.Super easy,super delicious.
