Paleo Yellow Curry

I am a huge fan of yellow curry and sadly can't find any local takeouts that are very paleo friendly (at least for yellow curry) and was wondering if anyone had any good recipes? Thanks!

Here is our favorite (quick and easy) family curry recipe:


I just use regular curry powder for it.

Another favorite is this one, which is more of a soup:


I leave out the noodles, of course, and just throw in any leftover chicken, shrimp, veggies, etc. The difference is that this recipe uses real curry paste (Thai kitchen) which is DELICIOUS and adds a whole other dimension of flavor. I use yellow, red, or green curry paste. It's a great way to use up leftovers.

Wegmans has several curry blends in their natural foods -> spices section. You can add them in with a meat or veg of your choice and use milk or coconut milk for a creamy sauce. (If you don't have a Wegmans, try a high end grocery chain.)

Yellow curry paste is AWESOME. I buy Mae Ploy curry paste from Amazon. My recipe is very easy; I make all kinds of variations with different meats and different veggies. Add some chicken broth, and you'll have soup!
