Easy Lenten choices in this Midwestern girls past have always been cheese pizza, mac n'cheese, a local church fish fry..basically lots of carbs and dairy to fill up on until we could have a burger on Saturday.
This year most of the family has gone Paleo. Plus we've upped the ante by trying to be as low carb as possible too. That being said, it should be no problem to just stick to salads with nicely grilled fish or seafood for our Meatless Fridays but, there is a caveat. My 65 year old father just won't give up the carbs and the wheat voluntarily. It's a non starter. But since what he doesn't know won't hurt him (ala substitutions that he's not aware of), I've been looking online for some awesome recipes that mimic his beloved favorites without being too obviously different from the originals.
Does anyone have any meatless classics that are gluten free and low(er) carb to share? I'm talking tuna noodle casserole, fried shrimp, the good stuff folks!

Do you have this cookbook: Paleo Comfort Food? The gravy is delicious (I make it plain without any sausage in it). I use the gravy to top sauteed greens, so they taste "creamed."
Salmon Cakes from Everyday Paleo (we used to call them salmon croquettes).
Paleo Fish Sticks from Health-Bent.com. I love these bc they use crushed plantain chips to bread them instead of the usual paleo almond flour.
