Hack a Deer Neck

I have been gifted a deer neck from a hunter friend. What the hell do I do with it? It's frozen, so I can't tell how clean it is. I would imagine that there is a lot of nasty stuff to clean out of it like a thyroid? Lymph glands? Esophagus and wind pipe? Spinal cord hopefully is gone, right? Also I'm not a big fan of game meat. This thing is huge; as long as my arm. I don't even know what I would cook it in. I'm dreading it, but luckily I just got half a cow from a friend of mine, so have 200# of nice, safe, normal beef that I can rely on for sustenance before I become desperate enough to hit the deer neck. Can't really find a ton of info online though... Any help from hunters would be appreciated.

not quite sure buck or doe....ive had some of the other meat off this same animal though and it was QUITE gamey. and, its pretty big though ive never had a neck otherwise, so not much to compare it to..

ooooooo this is AWESOME. thanks so much! i have more of the venison, but the roasts and stew meat dont freak me out as much as the neck and all that it contains. i need lots of recipes though. perfect.

Literally and figuratively hack that deer neck! I say stock.

I was super curious and found this absolutely amazing link! 301 Venison Recipes: The Ultimate Deer Hunter's Cookbook By Deer Hunting Magazine AND with scanned pages! Stock AND soup for you. For reals, anything you ever wanted to know about venison but were afraid to ask is contained within there. Yes, there are ingredients in there that are craptastic but I already know you can make it work all Paleo like :)

Hopefully some hunters out there will chime in, too!

Buck or doe? A buck neck sounds very gamey to me, especially considering the physiological changes they go through during breeding season (i.e. become odorous and the neck swells). A doe neck is much less problematic.
