I'm trying to bake cookies using the most natural ingredients possible. The recipe that I developed, and tested, this morning is as follows:
12 oz. almonds (blended)
8 oz. dates (blended)
1 half of an avocado
1 tablespoon cinnamon
I combined them all, and while the batter was amazing (seriously, I would make them again just to eat the batter) my "cookies" came out more like fudgey bites. They were delicious, and super filling, but I was hoping for something a little more crispy... closer to the traditional non-Paleo cookie.
Does anyone have a recipe that has worked for them?
