Best Mashed Sweet Potato/Yams Recipe?

I gotta say, I never understood the marshmallows, nuts and sugars on something that's already pretty freakin' sweet.

Agreed -- skins on sweet potatoes have never given me problems. Plus they are crunchy and tasty, I'd much rather eat a straight baked tuber than a mushed-up one.

It's great... leave the skins on too I just remembered. Keeps them from mushing too much and gets a nice crisp. Make sure you scrub them real good, too. And cut off any nasty spots. Sweet potato mold's been toxic long before anyone was bulletproof...

I mash sweet potatoes with fresh grated ginger root, lemon zest and butter, maybe a dash of cayenne.

And then I eat the whole thing for dessert.

I cut them in 1/2 slices about 1/4" thick.

Toss with powder ginger, cinnamon, a little nutmeg & a little Montreal season.

Toss in melted coconut oil

Bake in a heavy pan preheated 450 oven. Stir/turn every 20 minutes until tender.

About 15/20 before its done toss in chopped garlic, put back in the oven to finish. Should take 40 minutes or so, total oven time.

If you want to use fresh ginger add it when you add the garlic. Don't add too much though.

Curry powder, lemongrass paste, cilantro, honey, lime juice... you can have a lot of fun with sweet potatoes.

But... only if you are looking for a sweet recipe, not savory! You make a fake marshmallow topping with egg whites and honey, but I would also recommend adding pecans to the top. Yum!

Make a sweet potato puree with a little bit of butter and to be a little naughty on turkey day, find an organic maple syrup and add a couple tablespoons . . .YUM!
