Any suggestions for egg alternative diets?

We just started Paleo this year and so far I'm not finding it too difficult. Almond milk is a good substitute for a lot of dairy needs, and we've found some good recipes online for paleo bread, pancakes, banana bread etc. for when you want bread in the morning. However, all of the bread recipes require a lot of eggs (7 to make one loaf of paleo bread) - we love eggs, but I don't want them everyday and don't want to have them hidden in other foods. Between that and all the protein I don't want us to increase our cholesterol levels.

Any suggestions for alternative recipes without so many eggs that can help us make the transition?

I've used this in some egg-free baking, it works quite well from a consistency perspective for binding food together, as eggs would do. Make sure you grind the flax seed and use it fresh. If you buy a large quantity of pre-ground flax it will go rancid and taste off. Also, when you add the water, let it sit in the fridge for about 15-30 minutes before you use it. Good luck.

Well, the question wasn't "what's more 'paleo', eggs or flaxsseeds" was it? No, it wasn't. But also why are eggs more "paleo" than seeds?

flaxseed eggs work good for replacing 3 eggs max. i haven't had success with using over that.

you really don't need bread though. i usually bake treats for holidays but that's it. you will end up getting fat if that's all you're doing- not from eating too many eggs haha

You can substitute chia seeds of flaxseed meal mixed with water for eggs, but remember-dietary cholesterol and blood cholesterol have nothing to do with one another, and, sure, while paleo breads and muffins and pancakes are yummy, they're really not for everyday and are more of a treat. See if you can get used to eating eggs straight up. After all, eggs are one of the most nutrient dense foods on the planet!

As stated already by paint94979 the body makes cholesterol and what you eat just means the body makes a bit less of it to compensate. Beyond that, you should learn to let go of "bread", it isn't great for you. I used to be and avid home bread baker from sourdough cultures. It was excellent but it caused me to eat way too much and other family members had gluten issues, so we gave it up and don't even think about reintroducing it.

Have a baked potato with some sauteed greens and tuna/salmon/sardines as a change of pace. Don't fear the egg !

Dietary cholesterol has little to no effect on serum cholesterol... I eat 3 eggs everyday mine are pastured which does make a difference.

Substitute for eggs is finely ground flaxseeds mixed with a small amount of water until desired consistency is achieved.

Note: I've never actually done this so can't vouch for its efficacy, but it says so on the back of a bag of flaxseeds that's been sitting in my freezer for a year.
