I'm recently started seeing someone who isn't paleo (but very open to it) and he's coming to stay with me for a night or two next weekend (we live in different cities). I want to make something delicious and paleo to knock his socks off. It would be awesome if it was something I could do most of the prep for in advance. I'm sure we'll have plenty of opportunity to go out to eat, but a dinner, dessert, and/or breakfast option would be fantastic. Anyone have some ideas? Thanks!!

So many options out there. If you know what kind of foods he likes, google a particular dish with "Paleo" in front of it, and you'll find tons of recipes on various Paleo blogs.
If he doesn't state any preferences or strong dislikes, almost nobody (except a vegetarian/vegan) would turn down a slab of good quality meat or a deliciously crispy-skinned roasted organic chicken. Serve it with lots of veggies and perhaps sweet potatoes and he won't miss the bread and pasta/grain side dish. Serve a great salad, your favorite fruit for dessert, and a decent bottle of wine, and he may not even notice it's Paleo.
For breakfast, you can't go wrong with omelets and bacon or sausage patties. Use 3 eggs each, and he won't miss the toast. And for lunch, a Big Ass Salad with leftover steak or chicken, tons of veggies, avocado, homemade dressing. Don't forget the option of fish or fresh seafood for another dinner.
If you are using fresh, good quality ingredients, you don't need a lot of fancy recipes to impress.
