I see how important knowing what these percentages are, but from a math perspective, how do I go about figuring them out? I am so bad at math and don't how to start figuring out what % I eat of this or what % of that. One I look at what I am taking in, where do I go from there?

Plug all your food intake into Cronometer (my personal favorite) or a site like fitday. It will spit out the percentages of each macronutrient you have, and it will also tell you how many nutrients you're getting and which ones you're missing.
