What IS in a roast ham joint then?

I have in front of me a roasted ham joint from Tesco. Ready to eat.

On the nutritional info, per 100g, it says

Protein 20g Carbs 1g Fat 5.9g Fibre 0 Sodium 0.7 Salt equivalent 1.8

That is all it says.

Now I'm no mathematician but that adds up to 29.4%.

So what is the remaining 70.6% made up of? (Water???)

Ham is mostly water, as are you.
