I've done modified airlocks too - it's all good. The pickl-it was a splurge (worthwhile!). But I think any kind of an airlock wins over cloth. My spoilage rate went WAY down with airlocks.

Or save yourself $40 or $50 by getting a $3 airlock at a home brew shop. My local home brew shop will even drill the hole in the canning jar lid for free. A simple cloth over the top of the jar works, too.

And heck, I'm not super dairy tolerant (when it comes to milk) but I do fine with cows milk kefir. That 24 hour thing really does work.

No, this is not healthy, it's full of gums and pectin. It's also not real kefir, because commercial kefir does not contain yeasts (because of bottling regulations). To get the real kefir, with all its 43 different bacteria and yeasts, the superfood, you will have to make it yourself. If you're not very dairy intolerant, consider making it using goat milk and not coconut milk. Goat milk is the safest of milks (because it does not have the casein problems that US cow milk has), and if you let it ferment for 24 hours, the amount of lactose will be minimal. Also, making kefir is super easy and it does not require special equipment.

Personally i don't touch anything that contains Carrageenan.
Opinions may vary about Carrageenan, but imo best to play it safe & just avoid it.

Have a google for yourself, & here's the wiki for Carrageenan (look under health concerns).

edit:
I find this site (complete lists of additives) comes in handy when quickly checking ingredients in shops.
Save the link to your phone (if its a smartphone).

Kefir really is a cinch to make. Quart jar, clean hand or plastic strainer, milk. Done and done. Mail order yourself some grains if need be and have fun. Maybe try lacto-fermenting, too? I love my pickl-it jars. No dairy required for those happy bacteria.

Chicory Root Extract (Inulin) can cause bloating.

It's SO easy to make kefir, and you don't have to ask the "is it healthy" question. The trickiest part is obtaining grains. Ask friends, try freecycle, eBay, Craigslist, or Amazon.

I like to mix dairy kefir with coconut milk, and sometimes I ferment the coconut milk directly. Delicious.
