Which exactly is the one you call Sweet Potato?

I am form Puerto Rico and for us sweet potatoes are all different kinds of "batata". One of them is orange on the inside which is the sweetest, the other is sort of pale green somewhere in between and the other one is white almost like a regular potato but kind of sweeter. I don't know which is the one that is soooooo recommended around the Paleo community or if they all are as good. Thanks!

All of the orange-fleshed ones taste more or less the same to me, but the Japanese/Oriental white-fleshed ones are noticeably different. For what it's worth, I think they taste fine just steamed, but when you add cinnamon and some butter it's like a dessert.

Is the Jewel the dark orange one? That's my favorite. I had the light green ones the other day, and they were pretty dry, not my faves. Garnets are alright, but to me they taste the most "yammy" if you know what I mean.

just to add... sometimes the 'oriental sweet potato' will be labeled 'Japanese sweet potato'.

I rotate between them so I don't get too much beta carotene from the orange ones and because the taste difference keeps things interesting. The ones I buy are called (by my market) "garnet yams," "sweet potato," "oriental sweet potato" and "jewel yams."

Unlike Sherpamelissa, I have always referred to yams as being the orange color. Garnet is a variety of yam. The tuber that is yellowish brown on the outside and pale yellow on the inside for me has always been a sweet potato.

For your purposes, use them all for an ok starch...knowing that the orange flesh is a bit sweeter.

Edit: I also have gone by the supermarket label. But looking at wiki for the two, I find that probably I have the names reversed.

Typically when people are speaking of "sweet potato" they mean the one that is orange inside. They are all good though!
