3-4 apples or 200 oz. of broccoli. If it's green then it'll be a ton! If it's a fruit then it will be much less. 3-4 cups of berries, 4-5 pears, etc. just mix and match until you have what will keep you full.

I eat roughly 3-4 lbs of beef/week. With the 3 of you let's say about 8 lbs/wk so maybe 10 weeks. Probably 8 weeks if you have guests over.

Seems ok, but try it for a little while and see how you fee. Not sure you need 48g whey protein, rather than just eat a little more. You are already getting a lot of protein, so I don't see the need to supplement.

Liver pate. Cut to cubes, saute briefly in ghee with onion and garlic, throw in white wine near the end, let it reduce. Blend or use a food processor. Add bacon for extra goodness.
