protein and nutrition of pork skin?

I bought some pork belly skin and it is mostly skin with fat attached; very little muscle meat. does anyone know the nutritional profile of skin? is it different from meat? is it collagen? it is certainly very tough to chew.

I cook pork skin all the time. Love it. I think it's mostly collagen.

You want to eat that pork skin as much as you can, like it is a salad, but first you have to dip the pork skin in butter. Once it has been dipped in butter, you want to fry them up in coconut oil, and once you have fried them up in coconut oil, you want to douse them in ghee. And once you have doused them in ghee, you want to set up a little dish of EVOO and dip the pork skin in the EVOO.

I don't know the nutritional profile, but frying it in coconut oil or lard makes it nice and crispy. The oil must be screaming hot and I cut the skin into 1" by 2" pieces. Once fried it stores nicely on the counter, though for how long I couldn't tell you. We go through it in a couple of days. I will also whir it up in the food processor and "bread" meat to be roasted. Superb!!!
