Recipes using Pork Soup Bones?

We purchased half a hog and now have some "pork soup bones" that I don't know what to do with. I know I could make broth, but I'd rather make a soup or stew of some sort. Does anyone have any suggestions of recipes I could try. A quick Google showed a lot of results for an Asian pork bone soup, but every recipe I saw used potatoes and I was looking for something more Paleo-friendly I'd appreciate any suggestions!

I just made pulled pork and was thinking about making a sort of homemade pho broth and grabbing some rice noodles with the left over bone. Is it a good idea to use the fat as well and drain it later?

The hard part is finding a place to slice beef thin enough for Pho Tai, where raw beef cooks in the broth. My favorite soup and it seems like rice noodles are not so bad-just very filling.

My mind immediately went to sauerkraut- pork with sauerkraut is classic.

I would make soup here with pork soup bones without potatoes.

I don't really have any sort of recipe though - I just made it to taste with whatever I had on hand. I'd make a broth with a little apple cider or plum vinegar vinegar, a little sesame seed oil, Korean hot pepper, black pepper, ginger, lotus root, bok choy, maybe the tiniest bit of cinammon or nutmeg if I could find it, spinach, tons of green onions, some white onion, garlic, and if I was feeling it, a little sweet potato or sesame seeds If I had any, I might throw in some napa cabbage or a little cabbage kimchi, a green apple, or any other nice greens I got at the vegetable stand.

Most recipes call for soy sauce, but if you don't want to use it, you can just add a little salt.
