Would marinating in ziploc bags defeat all of my efforts to avoid cooking with anything plastic? Marinades can have lots of fat and also be very acidic. I would think that would be a perfect combo to leech crap out of the bag and into the fat.

I am under the impression that for the BPA in the plastic to combine with your food you would have to raise the temperature. If the marinate is cold or room temp I don't think you would have an issue. You could also just use BPA free plastic bags.
